The humble salad

 Vegetables are some of your best friends when you have a histamine intolerance issue. Most veggies, as long as they're fresh or freshly cooked, will help to give your body the nutrients it needs for optimal health. Spinach, tomatoes, eggplant, and avocado (insert sad face here)  are the veggies  to avoid. Besides that, I'm quite game to try anything. I do check with google  before I try something new, though.  I know, a bowl full of salad sounds boring, and truthfully, it can be. But it's simple to prepare and tasty. One of my favorites include a mix of greens, chopped red onion, yellow, red, or orange peppers, sliced cucumber, and a mix of sprouts. I slice two boiled eggs on top, and add almonds toasted in a in a cast iron pan. Before pouring homemade salad dressing over everything, I sometimes add apple chunks, blueberries, or grapes. Often I will slice oven roasted chicken over top of the salad instead of the eggs. Simple Salad Dressing: 1/4 c. apple cider vinegar, 1/2
